I don’t like spending time on food, especially when it comes to lunch. I want something fast and simple since I’m usually rushing from class to clinic or just taking a quick break at home. This is why I love leftovers. I’ve decided fish fillets are wonderful and so easy to bake. They’re fairly low calorie and full of good nutrients. And they make wonderful leftovers! My lunch today consisted of garlic pepper tilapia, Mexican rice (more leftovers, made from a box), and an avocado. Unfortunately, I managed to completely mangle my avocado, so it’s a less than appetizing picture.
I’ve been craving avocado lately. That has to be healthier than my usual chocolate cravings, right?
